Ingredients
1 (16.3 oz) can refrigerated biscuits (like Pillsbury Grands!)
1 lb bacon, cooked and crumbled
8 large eggs
¾ cup milk
2 cups shredded sharp cheddar cheese, divided
½ tsp salt
½ tsp black pepper
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Cut each biscuit into quarters and arrange them in a single layer in the bottom of the dish.
3. Sprinkle 1 cup of the shredded cheese and half of the crumbled bacon over the biscuit pieces.
4. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
5. Pour the egg mixture evenly over the biscuits and cheese in the dish.
6. Top with the remaining crumbled bacon and the remaining 1 cup of cheese.
7. Bake for 25-30 minutes, or until the eggs are set in the center and the top is golden brown and bubbly.
8. Let the casserole rest for 5-10 minutes before slicing and serving.
Notes
Make-Ahead: Assemble the casserole the night before (do not bake), cover tightly, and refrigerate. Add 5-10 minutes to the baking time.
Variations: Substitute bacon with 1 lb of cooked breakfast sausage or diced ham. Add ½ cup of sautéed onions or bell peppers for extra flavor.
