Ingredients

2 cups shredded chicken

1 can black beans, drained

1 cup corn kernels

1 red bell pepper, diced

2 cups shredded cheddar cheese

2 cups enchilada sauce or salsa

8 small tortillas

1 tsp cumin

1 tsp chili powder

1 tbsp olive oil

Fresh cilantro, for garnish

Instructions

1. Preheat oven to 350°F (175°C).

2. Sauté peppers in olive oil until soft, then stir in beans, corn, and spices.

3. Spread a thin layer of sauce in a baking dish.

4. Layer tortillas, chicken, veggie mix, cheese, and sauce.

5. Repeat layers until dish is full, ending with cheese on top.

6. Cover with foil and bake for 25 minutes.

7. Remove foil and bake another 10 minutes until bubbly.

8. Garnish with cilantro and serve with sour cream or guacamole.

Notes

You can substitute ground beef or turkey for chicken.

Make it vegetarian by doubling the beans and corn.
