1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can whole kernel corn, drained
1 cup crumbled feta cheese
1/2 cup finely chopped red onion
1/2 cup chopped fresh cilantro
1/4 cup extra-virgin olive oil
3 tablespoons fresh lime juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the rinsed black beans, drained corn, crumbled feta, chopped red onion, and fresh cilantro.
2. In a small bowl or jar, whisk together the olive oil, fresh lime juice, salt, and pepper to create the dressing.
3. Pour the dressing over the bean and corn mixture. Toss gently until everything is well combined.
4. For best results, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature with tortilla chips, crackers, or as a topping.
Notes
**Make-Ahead Tip:** You can mix the beans, corn, onion, and dressing ahead of time. Add the feta and fresh cilantro just before serving to keep them fresh.
