1/2 cup mayonnaise
2 tbsp red wine vinegar

Instructions
1. Make the Dressing: In a small bowl, whisk together the mayonnaise, red wine vinegar, olive oil, and dried oregano. Season with salt and pepper to taste and set aside.
2. Chop the Filling: On a large cutting board, place the iceberg lettuce down first. Top with the red onion, tomato, salami, ham, pepperoni, provolone cheese, and banana peppers.
3. Using a large knife, chop everything together by rocking the knife back and forth over the pile. Continue until all ingredients are in small, uniform, bite-sized pieces.
4. Mix the Filling: Transfer the chopped mixture to a large bowl. Pour about half of the dressing over the top and gently fold everything together with a spatula until just combined. Add more dressing if needed, but be careful not to make it too wet.
5. Assemble the Sandwiches: Slice the hoagie rolls lengthwise, being careful not to cut all the way through. Toast them lightly for best results.
